The Capital Region town of Delmar is home to a new restaurant, Coray Kitchen, that specializes in dishes inspired by Latin, Asian, Italian, Mediterranean and Middle Eastern cuisines. Chef Javier Villatoro and his wife Casey Carroll co-own the restaurant, named after Chef Javier’s hometown in Honduras, and the global cuisine on the menu has been created as a reflection of the flavors and people that have inspired his culinary journey. The restaurant focuses on seasonal, scratch-made recipes with local, sustainable ingredients and a zero-waste philosophy in the kitchen. Coray Kitchen is open during dinner hours, Tuesday – Saturday from 4 – 9 p.m., and is closed on Sundays and Mondays.
